    My friend Austin’s wife Nikki is making cake for the two-hour Battlestar Galactica finale tonight. In their case it is chocolate cake with cherry icing, but it immediately made me think “Cylon cake?” (because I do not watch that show and that is my one joke about it. Frakking toasters! See?) and then try to figure out what that would be.

    So in honor of the ending of a show that I know I should have been watching all along, I give you:

    Cylon Cake

    (gluten-free, of course!)

    Cake ingredients:

    7 large free-range eggs
    1/2 cup potato starch
    1/2 cup cornstarch
    1 3/4 cups granulated fructose or sugar
    1/2 teaspoon salt
    1/2 teaspoon cream of tartar
    2 teaspoons vanilla

    Frosting ingredients:

    2 cups organic shredded coconut
    1 cup organic heavy whipping cream
    1 tablespoon of fructose
    1/2 teaspoon more vanilla, if you like

    Preheat the oven to 375 degrees Fahrenheit. Separate the eggs and let the whites come to room temperature while you think of another use for all those yolks. Sift the potato starch, cornstarch, and fructose together. In a separate bowl, mix the whites with the salt, cream of tartar, and the vanilla, until stiff peaks form. (Real vanilla, not nasty artificial flavoring – of course!) Gently fold in the sifted stuff. Grease a tube pan, or any cake pan that you think will hold it if you don’t have a tube pan, and pour in the batter. Bake for about 40 minutes, until golden brown.

    Let cool upside down. (A similar recipe suggested placing it on the neck of a tall bottle, as the cake rises high and it may not be practical to just place it flat on the counter!) For the frosting, toast the coconut briefly either on a baking sheet in the oven or in a dry pan on the stovetop.

    Beat the cream and sugar (and vanilla, if using) together until thick and fluffy. Spread on the top and sides of the cake, garnishing lavishly with toasted coconut. Alternatively, you may hold off on frosting it and instead serve by toasting each slice in the broiler, then topping with whipped cream and toasted coconut. Enjoy!

    I kind of can’t wait to try this.
